Vegan Pineapple Fried Rice

  1. Cut the Tonzu firm tofu into small cubes, and then toss it with 1 tablespoon of Ceres Organics tamari soy sauce and 1 tablespoon of Ceres Organics toasted sesame oil. Let it marinate for at least 20 minutes.
  2. In a large pan, heat 2 tablespoons of coconut oil over medium-high heat. Add the tofu and sauté until it is golden brown.
  3. Add the garlic, red capsicum, and brown onion, and sauté until they are softened.
  4. Add the cooked rice, spray-free fresh pineapple, pineapple juice, tamari, rice vinegar, coconut sugar, and red pepper flakes. Stir until everything is well combined and heated through.
  5. Season with salt and pepper to taste.
  6. Garnish with spring onions and serve hot.
