Prep time: 10-15 mins plus 2-3 hrs marinating
3 tablespoons Extra virgin olive oil
2 tablespoons Pure Blaze Organic Natural Glaze,Reduced balsamic
3g fresh oregano, leaves picked, roughly chopped
1 small garlic clove, peeled, finely mince
500g mixed colour cherry tomatoes, halved
15 fresh basil leaves, roughly chopped
3g fresh Italian parsley, roughly chopped
In medium sized mixing bowl add the olive oil, balsamic glaze, oregano and garlic, season to taste and whisk to combine.
Add tomatoes and gently toss to combine.
Cover and marinate for 2-3 hrs.
Add the basil and parsley to the tomato mix and gently stir to combine before transferring to a serving bowl.
