- 1 organic summer orange squash, sliced into wedges
- 2 organic beetroots, peeled and diced
- 3 organic carrots, peeled and sliced
- 2 agria potatoes, peeled and cut into chunks
- 1 red onion, peeled and cut into wedges
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Preheat your oven to 200°C.
In a large bowl, toss the squash wedges, diced beetroots, sliced carrots, potato chunks, and onion wedges with olive oil until evenly coated.
Season with salt and pepper to taste.
Spread the vegetables out on a baking sheet lined with baking paper, ensuring they are in a single layer.
