Ingredients

1 cup spelt flour
1 cup almond meal
1/2 cup coconut sugar
1/2 cup hemp hearts and extra for topping
1 tsp cinnamon
1/2 tsp vanilla
1 tsp baking soda
Pinch of salt
2 eggs
3 ripe bananas mashed
1/4 cup almond milk
1/4 cup coconut oil, melted
1/2 cup chopped walnuts

Method:

  1. Preheat oven to 170 degrees celsius In a large mixing bowl, add all dry ingredients (other than the walnuts) and mix together with a wooden spoon.
  2. In a blender add in eggs, bananas, milk and melted coconut oil and blend until bananas are fully broken down.
  3. Add the wet ingredients into the bowl with the dry ingredients and mix together.
  4. Fold in chopped walnuts.
  5. Pour mixture into a lined or silicone loaf tin and bake for 40-45mins until a knife comes out clean.
  6. Allow to cool and then transfer to a wire rack. Cut into slices and enjoy on its own or with your favourite nut butter.
