½ cup chickpea flour
½ cup water
2 cups grated kumara, loosely packed
4 heaped Tbsp kimchi, chopped (use the juice too!)
4 Tbsp chopped coriander, stalks are fine *
1 tsp salt
oil for shallow frying
* or swap for chopped spinach or flat leaf parsley

1. Put the chickpea flour and water into a bowl & mix well, making sure to ease out any lumps of flour.  

2. Add the remaining ingredients and mix well again. You want everything to be well coated with the damp chickpea ‘batter’.

3. Heat a little oil in a pan and fry spoonfuls of the mixture to create fritters.  Cook until golden on each side. 

4. Great served on their own or with a dollop of plant-based aioli or mayo.
