Marinated Lebanese Cucumbers with a Zesty Twist

We're thrilled to welcome back our new season BioGro certified organic Lebanese cucumbers to Huckleberry, just in time for summer. Were you aware that Lebanese cucumbers offer a hydrating boost with a water content exceeding 95%? These cucumbers are an excellent choice for keeping refreshed and nourished throughout the summer.

Drawing inspiration from the classic Chinese side dish, we love making this delightful marinated cucumber recipe that blends the crispness of organic Lebanese cucumbers with the tang of sharp vinegar and the kick of spicy chili. It's so simple to prepare and serves as a healthful accompaniment to elevate your Christmas feast. 

Ingredients:

  • 4 organic Lebanese cucumbers, thinly sliced
  • 3 cloves of garlic, minced
  • 1 red chili, finely chopped
  • 1/4 cup rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon sugar
  • Sesame seeds for garnish

Instructions:

In a bowl, mix rice vinegar, sesame oil, minced garlic, chopped red chili, and sugar until the sugar dissolves.

Add the thinly sliced Lebanese cucumbers to the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes to soak up the flavours.

Sprinkle with sesame seeds just before serving for an extra crunch and nutty flavour.
