Roast Carrot & Bu Deli Feta Salad

The amazing Bu Deli products are in stores! These guys have created an amazing plant based butter & feta cheese that you NEED to try. Both products are made in Mount Maunganui so they're NZ made too by a small team with no plastic packaging, so many things to get on board with. We got our hands on a jar of the feta and had a little play in this salad which has a Middle Eastern vibe!

INGREDIENTS

4-6 organic table carrots (or 1 bunch of carrots) sliced how you like. We used a bunch and cut them into long quarters.
1 tsp ground turmeric
1 tsp ground cumin
1 tsp fennel seed
1 tbsp olive oil
2 large handfuls of Italian parsley
1 handful of mint leaves
3-5 medjool dates
2 tbsp raisins
2 tbsp Bu Deli Marinated Coconut Feta

METHOD

Preheat oven to 180°c. Toss carrots with spices and olive oil on a baking sheet. Bake for 20 mins or until sizzling and browning.

Chop parsley and mint finely. Slice dates.

When carrots are ready, pile onto a plate and toss with herbs, dates and raisins. Crumble the Bu Deli vegan feta over the top.

How easy was that? This salad will serve 3-4 as a side or 2 as a main with an extra protein. It would be perfect with some organic lamb, falafel or sustainably caught fresh fish.
