Purple Broccoletti Pasta with Anchovies

This vibrant dish perfectly balances the sweetness of our Pick of the Week (week of September 25th) Purple Broccoletti with the umami richness of anchovies. It's a flavour explosion that will leave your taste buds singing.


Ingredients:

  • 250g pasta of your choice
  • 1 bunch of Purple Broccoletti, stems and leaves included, chopped
  • 2 cloves garlic, minced
  • 4-6 anchovy fillets, finely chopped (adjust to taste)
  • 2 tablespoons olive oil
  • Zest of 1 lemon
  • Red pepper flakes (optional, for some heat)
  • Grated Parmesan cheese, for serving
  • Salt and pepper, to taste

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped anchovies. Sauté for a minute or two until the garlic is fragrant and the anchovies start to dissolve.

  3. Toss in the Purple Broccoletti, stirring occasionally, and sauté for about 5-7 minutes, or until they become tender and slightly crispy at the edges.

  4. Add the cooked pasta to the skillet, along with lemon zest and a pinch of red pepper flakes if you desire some heat. Toss everything together to combine. Season with salt and pepper to taste.

  5. Serve your Purple Broccoletti Pasta with a generous sprinkle of grated Parmesan cheese on top.
