Ingredients:

  • 2 cups Ceres Organics White Spelt Flour
  • 1 cup unsalted butter, softened
  • 1/2 cup Ceres Organics Maple Syrup
  • 1 cup chopped mixed nuts (walnuts, pecans, almonds)
  • 1/4 cup mixed seeds (pumpkin seeds, sunflower seeds)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions:

Preheat the Oven: Preheat your oven to 180°C. Line baking sheets with baking paper or reusable silicone baking sheet.

Cream the Butter and Maple Syrup: In a large mixing bowl, cream together the softened butter and Ceres Organics Maple Syrup until light and fluffy.

Add Vanilla Extract: Mix in the vanilla extract until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the Ceres Organics White Spelt Flour, baking powder, and salt.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

Fold in Nuts and Seeds: Gently fold in the chopped mixed nuts and seeds until evenly distributed throughout the dough.

Chill the Dough: Wrap the cookie dough in plastic wrap and chill in the refrigerator for at least 30 minutes. This helps the cookies hold their shape while baking.

Shape Cookies: Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, leaving some space between each cookie.

Bake: Bake in the preheated oven for 12-15 minutes or until the edges are golden brown. Keep an eye on them to prevent over-baking.

Cool: Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
