Classic Apple Pie with a Gluten-Free Twist

We're going to show you just one fantastic way to enjoy our Organic Fuji Apples, grown locally in Hastings: a Classic Apple Pie. These apples are known for their remarkable sweetness and crisp texture, making them a favourite for both snacking and baking. The best part about Fuji Apples is that they're incredibly versatile, We've even included a gluten-free option for those with dietary restrictions.

Ingredients:

For the Crust (Gluten-Free Option):

  • 1 ½ cups gluten-free all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 4-5 tablespoons ice water

For the Filling:

  • 6 Organic Fuji Apples, peeled, cored, and thinly sliced
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 2 tablespoons butter, cut into small pieces

Instructions:

For the Crust:

  1. In a bowl, combine the gluten-free flour and salt.
  2. Add the chilled, cubed butter and mix until the mixture resembles coarse crumbs.
  3. Slowly add ice water, one tablespoon at a time, until the dough comes together.
  4. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

For the Filling:

  1. In a large bowl, combine the sliced Fuji Apples, granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice. Toss until the apples are well coated.

Assembling the Pie:

  1. Preheat your oven to 220°C.
  2. Roll out the chilled dough on a floured surface to fit a 23cm pie pan.
  3. Place the crust in the pan and trim any excess dough.
  4. Fill the crust with the prepared apple filling and dot the top with butter pieces.
  5. Roll out the remaining dough to create a lattice or cover the pie with a whole crust, sealing the edges.
  6. Optionally, brush the crust with milk and sprinkle with sugar for a golden finish.
  7. Bake for 45-55 minutes or until the crust is golden brown, and the filling is bubbling.
  8. Allow the pie to cool before serving.
