Christmas Berry Pavlova

In New Zealand, Christmas arrives amidst the warmth of summer, bringing with it unique traditions and flavors that define a Kiwi holiday. One such tradition, indispensable at any Christmas gathering, is the pavlova - a meringue-based dessert named after the Russian ballerina Anna Pavlova.

This light, airy treat is the perfect dessert for showcasing New Zealand's fresh, organic berries that are now in season. These fresh bounty include BioGro certified organic cherries from Central Otago, known for their rich, juicy flavour. 

Our Christmas Berry Pavlova, adorned with the best of New Zealand's summer fruits, is more than just a dessert; it's a celebration of Kiwi Christmas. So gather your loved ones, share this festive treat, and make your Christmas truly memorable!

Ingredients:

  • 4 large egg whites, at room temperature
  • 1 cup caster sugar
  • 1 tsp white vinegar
  • 1 tsp cornflour
  • 1 tsp vanilla extract
  • Whipped cream, for topping
  • Fresh figs, quartered
  • Fresh Central Otago cherries, pitted and halved
  • Fresh strawberries, sliced
  • Fresh blueberries

Instructions:

Preheat and Prepare: Preheat your oven to 120°C. Line a baking sheet with parchment paper and draw a 9-inch circle as a guide.


Whisk the Egg Whites: In a clean, dry bowl, beat the egg whites until soft peaks form. Gradually add the sugar, whisking continuously, until the mixture is glossy and stiff peaks form.


Add Flavour and Stability: Gently fold in the vinegar, cornflour, and vanilla extract. This will help stabilize the meringue and give it a crisp exterior and soft, marshmallow-like interior.


Shape the Pavlova: Spoon the meringue onto the parchment paper, using the circle as a guide. Shape it with a spatula, creating a slight well in the center.


Bake: Bake for 1 hour and 15 minutes, or until the pavlova is dry to the touch. Turn off the oven and let the pavlova cool completely inside, with the door slightly ajar.


Decorate: Once cooled, carefully transfer the pavlova to a serving dish. Top with whipped cream and arrange the fresh figs, cherries, strawberries, and blueberries on top.

Serve and Enjoy: Serve immediately and enjoy the delightful combination of crisp meringue, soft cream, and the fresh, juicy flavours of summer berries.
