Strawberry Delight

A smooth blend of seasonal strawberries makes for a delightful summer treat. This recipe calls for Betta Sweet - a balanced blend of non-GE Stevia extract and non-GE corn erythritol. Stevia is a naturally sweet plant that has a long history of use as a natural sweetener. Erythritol is a sweet plant sugar alcohol that has been part of the human diet for thousands of years. It is found in a wide range of foods that include grains, fruit, vegetables, cheese, mushrooms, even grapes and wine.

INGREDIENTS

500g strawberries
350g your favourite coconut yoghurt
7 tsp Betta sweet
Juice from 1 organic lemon

METHOD

Remove the stalks from the strawberries and cut into small pieces

Place half of the strawberries into a bowl, and stir in half of the lemon juice, and 2 teaspoons of Betta Sweet

In a blender, blend the remaining half of the strawberries and lemon juice with 5 teaspoons of Betta Sweet. Blend until smooth.

Transfer half of this mixture into a small bowl

Add the coconut yoghurt to the blender with the remaining half of the strawberry mix and blend until smooth

In small jars or ramekins, fill to half way with the strawberry and coconut yoghurt blend, then fill to 3/4 of the way with the strawberry blend, and top with strawberry pieces soaked in lemon.

Serve immediately.
