Tapioca starch or flour is obtained from the cassava plant. It is a slightly sweet, white flour that is high in starch. It is commonly used in cooking as a thickening agent in fruit fillings and glazes or to make puddings and desserts. If mixed with other flours, it can also be used in baking.
