Chickpea or besan flour is made from ground chana dahl, a variety of chickpea that's been hulled and split. This fine, soft flour, pale creamy yellow in colour, has a slightly nutty flavour and earthy aroma. Rich in fibre and a good source of protein, besan is ideal for vegetarian / vegan diets. Besides thickening soups and curries, or used as batter for fish and vegetables, this nutritious flour is also great for making crepes and other pastries.
