Ingredients

1-2 raw courgettes.
1/2 red capsicum
1/4 onion
1-2 ripe tomatoes.
2-4 scoops of Seasons Gourmet vegan pesto.
1/2 avocado
1/2 lime or lemon
Salt to taste
1/4 teaspoon (a sprinkle) of smoked paprika

Method:

1. Thinly slice all your ingredients (except your courgettes) and mix in a bowl. Add a dash of salt to release flavour from the tomatoes.

2. Peel (if you don’t have a spiralizer) the entire raw courgette/s.

3. In a large bowl - mix in your pesto, raw courgettes, a squeeze of lime, smoked paprika, and salt to taste. Let your zoodles (courgettes) marinate for a couple minutes to soften.

4. Then, mix in the rest of your sliced veggies and avocado.
