2 cups water
2 cups white vinegar
1-2 teaspoons unrefined sugar
1 teaspoon salt
1 teaspoon caraway seeds
1 star anise
6 carrots peeled and cut into even slices

  1. In a saucepan bring the water vinegar, sugar, salt and spices to a boil.
  2. Allow to cool while you prepare the carrots.
  3. Place the carrots in a large bowl or container and pour over the brine. 
  4. Chill and store for 2-3 days before eating.
