2 cups frozen peas, defrosted
1 block soft tofu, well drained pressed in a clean teatowel or piece of muslin cloth to remove as much excess mosistore as possible.
1 avocado, peeled and stoned
Small bunch of mint
Juice of 1 lemon
Extra virgin olive oil
Salt and pepper to taste

  1. In a food processor combine the peas, tofu, avocado, mint and lemon juice to a rough paste using extra virgin olive oil to loosen as needed.
  2. Churn to desired consistency-more for a nice smooth paste or less for a little chunky. 
  3. Add salt and pepper to taste.
  4. Serve immediately.
