3 tablespoons olive oil
2 tablespoons Pure Blaze Organic Natural Glaze or reduced balsamic
3g fresh oregano, leaves picked, roughly chopped
1 small garlic clove, peeled, finely minced
500g mixed colour cherry tomatoes, halved
15 fresh basil leaves, roughly chopped
3g fresh Italian parsley, roughly chopped

  1. In medium sized mixing bowl add the olive oil, balsamic glaze, oregano and garlic. Season with salt and pepper to taste and whisk to combine.
  2. Add tomatoes and gently toss to combine. Cover and marinate for 2-3 hours.
  3. Add the basil and parsley to the tomato mix and gently stir to combine before transferring to a serving bowl.
