Upgrade your cheese on toast for a comfort food lunch. Make sure to use a piece of good strong cheddar cheese and remember to spread the mixture all the way to the edges so the toast will not burn before the cheese has cooked.

4 slices sourdough bread
1 cup grated cheddar cheese
½ teaspoon hot mustard powder
1 pinch cayenne pepper
½ teaspoon Worcestershire sauce
1 egg, beaten
Place the slices of bread under the grill until lightly browned on one side.
In a small mixing bowl add the cheese, mustard, Worcestershire sauce, beaten egg and season to taste.
Turn the slices of bread over and top with the cheese mixture, so it's evenly distributed over each slice including the edges.
Place back under the hot grill for 2-3 mins until the cheese is melted and golden.
