Skillet Pan Cookie

We couldn’t think of anything we’d rather enjoy for a mid-morning bite this weekend! For a festive treat sub out chocolate chips for chopped Easter eggs. 

INGREDIENTS: 

Dry Ingredients:

1 ½ cups Almond Meal
2 scoops Two Islands Natural Pea Protein 
1tsp baking soda
Pinch of salt

Wet Ingredients:

¼ cup Maple Syrup
3 tbsp melted coconut oil
1/3 cup Smooth peanut butter (or almond butter)
1 tsp vanilla essence
1 egg

Add-ins:

1/3 cup chocolate chips/drops + more to decorate if needed
Optional: crushed up nuts, more chocolate of another flavour, cranberries

METHOD:

Preheat oven to 175c and grease a skillet pan

Mix dry ingredients in a medium-large bowl

Whisk together wet ingredients in a separate bowl

Add wet ingredients to dry ingredients and mix together. Cookie dough should be
thick.

Fold in add-ins

Put dough onto skillet pan and spread and flatten dough around to make a rough
circle/cookie shape. Add more chocolate on top if you wish.

Place in oven and cook for 10-13 minutes or take out once the cookie is golden and
cooked through

Let it cool slightly before serving, serve warm with ice cream of choice. Choose to
eat it out of the skillet or cut into pieces to serve on a plate.
