These deliciously moist Muffins are sweetened with Lucuma and are the perfect healthy treat. Made from wholefood ingredients by the lovely Mel Chrisp, they're vegan, filled with crunchy Pecans and topped off with gooey melted Caramel Chocolate.
We blended our mixture in a high speed blender for a quick and consistent batter, however these can be made by hand too- just mash the banana well.
5 medium ripe Bananas
1/4 cup Oat Milk (or other plant milk)
1/3 cup Coconut Oil, melted
1/4 cup Maple Syrup
1/4 cup Lucuma Powder
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp fine Sea Salt
1 cup Spelt Flour
1 Cup Buckwheat Flour
1 Cup Pecans
1x 80g block Loving Earth Salted Caramel Chocolate
Preheat oven to 175 degrees.
Add wet ingredients, Lucuma Powder, Baking Soda, Baking Powder and Salt to your blender or food processor. Blend until combined.
Add 1 cup of flour at a time to mixture and blend. This will ensure there are no lumps and make for easy mixing.
Chop your Nuts and Chocolate roughly and add to your mixture and stir well.
Place Muffin cases in a Muffin Tray, spoon in mixture and bake for 15-20mins (some ovens may vary). Test with a skewer if it comes out clean your muffins are done.
Leave Muffins to cool.
Melt the other half of Caramel Chocolate and drizzle on top.
