Vegan BLT Rice Paper Rolls

1 packet Tofurkey Smokey Maple Bacon Tempeh
8 sheets of Rice Paper
1 head Cos Lettuce
2 Tomatoes
1 Avocado
100g Vegan Aioli
1 tbs Extra Virgin Olive Oil


Over a medium heat add Oil to a pan and fry your Tempeh for about 2 minutes per side or until golden brown. Remove from pan and place on paper towel.

Slice Tomato and Avocado. Trim Lettuce leaves so they are slightly smaller than the Rice Paper.

Fill a large bowl with warm water. Place a sheet of Rice Paper and soak for around 30 seconds.

Remove and place on a damp tea towel.

Place Lettuce, Tempeh, Tomato and Avocado leaving enough paper on the edges to fold over.

Drizzle Aioli on top.

Fold part of the Rice Paper over the filling and roll it up firmly and seal the two ends. Leave whole or cut in half if you prefer and place on serving dish.
