Pea Smash

Makes 1 large bowl


INGREDIENTS

2 cups frozen peas, defrosted

1 block soft tofu, well drained pressed in a clean teatowel or piece of muslin cloth to remove as much excess mosistore as possible.

1 avocado, peeled and stoned

Small bunch of mint

Juice of 1 lemon

Extra virgin olive oil

Salt and pepper to taste

METHOD

In a food processor combine the peas, tofu, avoacodo, mint and lemon juice to a rough paste using extra virgin olive oil to loosen as needed.

Churn to desired consistency-more for a nice smooth paste or less for a little chunky

Add salt and pepper to taste

Serve immediately
