This refreshing salad made with honeydew or cantaloupe melon and cucumber is perfect for those warm summer days. The pistachio and chilli dressing provide extra flavour along with the addition of feta and basil.

¼ cup raw pistachios, toasted, roughly chopped
1 green chilli, halved, deseeded, thinly sliced
2 tbsp apple cider vinegar
1 tsp liquid honey
3 tbsp extra-virgin olive oil
2 Lebanese cucumbers, halved lengthwise, deseeded
¼ medium ripe honeydew melon or cantaloupe, rind removed
140g feta, crumbled
½ cup basil leaves, plus extra for serving
In a small mixing bowl add ¾ of the pistachios, chilli, vinegar, honey and olive oil.
Whisk together to emulsified, season to taste.
Using a mandolin or a knife to shave the cucumber and honeydew lengthwise into thin slices.
Add the cucumber and melon to a large mixing bowl along with the basil and the dressing and toss gently to coat.
Place on a serving platter and sprinkle with the crumbled feta and reserved pistachio and basil.
