Maple Roasted Stone Fruit with Almond Granola Crumble

Switch up your morning with this mouth-watering, nutritional granola crumble! If you're on the run with little time to spare this is the perfect go-to and can be prepared the night before.

Serves: 4

Prep time: 15-20 mins

Cooking time: 20 mins

INGREDIENTS:

For the crumble

90g rolled oats
50g sliced almonds, toasted, roughly chopped
115g brown sugar
130g flour
115g butter, melted
1 teaspoon cinnamon
1 teaspoon sea salt

For the roast stone fruit


30g butter
8 peaches (or stonefruit of your choice), halved and pitted
180g maple syrup

METHOD: 

Preheat oven to 180°C.

line a shallow baking tray with baking paper.

In a large mixing bowl add the oats, almonds, brown sugar, flour, melted butter, cinnamon, and salt.

Rub with your fingers to combine until the mixture resembles coarse crumbs.

Spread the crumble mixture out in an even layer on the baking sheet.

Place in preheated oven and bake for 10 mins or until golden brown.

Remove the crumble mix from the oven and set aside to cool.

When the almond mix is cool enough to handle break up any large chunks.

Increase the heat of the oven to 240°C.

line a shallow baking tray with baking paper.

Add the halved peaches to the lined tray cut side up. 

In a small saucepan over low heat melt the butter and maple syrup together stirring to combine.

Drizzle this mixture over the peaches. 

Place the tray of peaches into the oven and roast for 5-8 mins or until nicely caramelized.
