When you're having people round you don't want to be stuck in the kitchen! These tasty little bits can be made before your guests arrive and are super tasty. They're also gluten free which can help if you're catering to allergies too.
INGREDIENTS
3 orange kumara
200g feta
100g Sour Cream
1 tbsp. olive oil
1 garlic clove
½ cup dried cranberries
½ cup roasted, unsalted cashews
2 tbsp. maple syrup
METHOD
Preheat an oven to 180°c. Slice kumara into 1cm rounds and place on baking sheet. Brush with olive oil and season with pepper. Bake for 40 minutes or until tender but not mushy.
In a food processor blend feta, sour cream, olive oil and garlic into a smooth paste.
When the kumara slices are cooked simply top with whipped feta, cranberries and cashews then drizzle with maple syrup.
This recipe makes about 30 rounds dependent on kumara size. It's easy to double if needed!
