Cherry Tomato Pasta for Kids

Serves 4

INGREDIENTS

200g Orgran Kids Farm Animals Rice and Corn Vegetable Pasta
200g cherry tomatoes, halved
50g pitted kalamata olive, roughly chopped
30g capers, roughly chopped
½ small garlic clove, minced
1 anchovy fillet, finely chopped (optional)
Small pinch chilli flakes
3g fresh Italian parsley, leaves picked, finely chopped
2g fresh oregano, leaves picked, finely chopped
1 tablespoon extra-virgin olive oil

METHOD

Bring a large saucepan filled with salted water to a boil over a high heat.

Add the pasta, bring back to a boil and cook for 8-10 mins or until al dente.

Drain the pasta well in a colander and set aside to cool.

In a medium sized mixing bowl add all the remaining ingredients mix to combine, season to taste.

Add the cooled pasta to the tomato mix and stir to combine.

Serve and enjoy!
