Rockmelon Breakfast Feast

Was it the word rockmelon or the word feast that brought you here? Either way, it's good to see you!

Rockmelon is not just a pretty (delicious) face, it's also a rich source of both vitamin A and vitamin C. We've made two breakfasts from 1 rockmelon here so there's no risk of one half hiding in the back of the fridge for too long.

Grab your favourite person and enjoy with them!

1/2 a Rockmelon
1/4 cup coconut yoghurt
3 passionfruit
1/4 cup your favourite granola
2-3 season fruits (we've used blueberries and nectarines)
Mint leaves for presentation

Scoop the seeds out of your watermelon half and pop in the compost.

In a small bowl combine coconut yoghurt and the flesh from 2 passionfruit. Place this in the hollow of your rockmelon.

Sprinkle granola over the top of the yoghurt. Top with fresh fruit, sliced or diced if necessary and the third passionfruit. Add a couple of baby mint leaves and enjoy!

1/2 a rockmelon
1 handful of mint leaves
Juice of 2 large lemons
1 cup of ice

Scoop seeds from rockmelon and compost. Scoop all the remaining flesh into a blender. Add mint leaves (don't include stalks), lemon juice and ice.

Blend until smooth.
