Sometimes the food you eat is quick and easy, sometimes it is beautiful and nutritious, just like these gorgeous little raw cakes! A huge thanks to Misty Day Plant Potions for the recipe which includes their cosmic brew (It contains a herbalist developed magickal blend of ingredients to make your mind and body sparkle).
1 ½ cup almonds
1 cup medjool dates
3 tablespoons water
3 cups raw cashews (soaked for three hours)
1/2 cup coconut oil, melted
juice of 1 lemon
1/2 cup brown rice syrup or coconut nectar
1/4 cup filtered water
3 teaspoons Misty Day Cosmic Brew
To make the base
In a food processor, process all almonds until they are fine. Add in the dates and continue mixing until crumbs form. Add water and continue mixing until the mixture starts to stick and turn into a ball. Take out the mixture and press into 6 silicon muffin trays. Refrigerate.
To make the cashew cream
Rinse the cashews and put them into the food processor. Process them until they are a fine consistency. Add the rest of the ingredients aside from the Misty Day Cosmic Brew and continue processing until smooth and creamy.
Then take the cashew cream and split into five bowls. Into one add a teaspoon of cosmic, into another ¾ and into another ½ and ¼ and then just a smidge. Mix through. You will then have five bowls of differing hues of blue cashew creams. Take out the muffin tray and layer the differing hues of cashew cream on the base, going from darkest, through to light. You don’t need to freeze between layers as you want them to blend together a bit.
Put into the freezer. Take out ½ an hour before serving and decorate with fruit and flowers!
