I absolutely love making my own homemade granola. I love to serve mine either as a topping on a delicious smoothie bowl or served with homemade almond milk, a dollop of vanilla coconut yoghurt and some fresh chopped fruit. I also love to grab a handful of granola to snack on during the day.
My honey cinnamon baked granola is sweet, crunchy, super simple to make and best of all packed full of nutritious whole food ingredients. I buy all my nuts, seeds and oats from the bulk bin in store at Huckleberry and also grab some Huckleberry honey whilst i'm there.
3 cups organic jumbo rolled oats
1/4 cup sunflower seeds
1/3 cup pumpkin seeds
1 cup coconut flakes
1/2 cup roughly chopped cashews
1/2 cup roughly chopped walnuts
1/2 cup roughly chopped cashews (or nuts of your choice)
1/4 cup organic extra virgin coconut oil
1/3 cup Huckleberry honey
1 tsp pure vanila extract
2 tsp cinnamon
Pinch of pink Himalayan salt
Preheat oven to 150°c.
In a bowl add all your nuts, seeds, rolled oats, cinnamon, salt and mix to combine.
In a small saucepan, add coconut oil, pure vanilla extract, honey and melt slowly over a low heat. Once fully melted, add to the bowl and mix through until everything is fully coated.
Line a baking try and spread out the mixture.
Bake for 20 minutes at 150 degrees. At 10 minutes stir the mixture and watch closely it does not burn or get too golden. I suggest you keep a very close eye on the oven.
