Sweet juicy mandarins and crunchy almonds make this salad one not to be missed over winter... The dressing uses Grapefruit Cayenne SWITCHEL tonic to give a firey, warming twist to the final result. It's a great way to use up a little tonic at the bottom of the bottle!
1 cos lettuce roughly chopped
1 radicchio roughly chopped
1 cup of sliced celery
1 cucumber sliced
1 avocado sliced
1 cup of coriander leaves
½ cup of parsley
¼ cup of mint
1 x cup of cherry tomatoes cut into halves (or two tomatoes, diced)
2 mandarins peeled and separated
1 cup of sliced or chopped almonds
50mls of Grapefruit with cayenne pepper SWITCHEL, shake to wake ‘The Mother’
50mls of flaxseed oil
2 tsp of yellow mustard
Pinch of salt & a crack of pepper
Mix all salad ingredients together keeping ½ cup of sliced almond aside for garnish.
Whisk together all the salad ingredients, seasoning to taste and then pour over salad
Garnish with reserved almonds and serve with your choice of protein or side.
