Roasted Fig & Grape Oatmeal

Autumn is here! In typical NZ style, the weather isn't too cold yet but there's a little bite in the mornings, which for the oatmeal lovers among us, is all we need to get some oats on the stove!

Make the next few weekend mornings feel extra special by adding organic figs and certified organic NZ grapes to the mix. Both are only around for a short time, so make the most of them!

INGREDIENTS
(Serves 2)

Honey Spice Nuts
1/5 tsp cinnamon
1 tsp ground ginger
1 tbsp honey
1/2 cup cashews

Honey Roasted Fruit
5 figs
A handful of red grapes, sliced in half with seeds removed
1 tbsp of honey

Oatmeal
1 tbsp honey
1 tsp cinnamon
1 tsp ginger
1 1/2 cup almond milk
3/4 cup oats

METHOD

Preheat oven to 180°c.

In a small bowl mix cinnamon, ginger & honey to a paste. Add cashews and stir to coat. Spread out in a small baking dish.

Slice 4 figs in half, place in a second small baking dish. Add halved grapes and drizzle with honey.

Put both the fruit and nuts in the oven and bake for 15 minutes.

To make the oatmeal, combine all ingredients in a small pan and cook slowly for 10 minutes until oats are soft and the mixture is creamy.

To serve, pop oatmeal in a bowl; top with roasted fruit, a few spiced nuts and slices from the remaining fresh fig.
