Another recipe from our friends at Coyo this week! This one uses their vanilla bean and nutmeg ice cream and is so good you'll want all four to yourself, now wouldn't that be indulgent! You can choose brownies that suit your dietary requirements to make this vegan or gluten-free.
1 500ml COYO Vanilla Bean + Nutmeg Organic Coconut Ice Cream
2 Brownies of choice (Natural Abundance brownies are delicious and offer different dietary requirement choices)
3-4 Tablespoons of Maple Syrup
1 Nutmeg freshly grated for garnish
200ml Organic Cold Brew Concentrate Regular or Caffeine Free
Set 4 glasses on a serving tray ready to be filled.
Rough chop your chocolate brownies and place a tablespoon of chopped brownie into the bottom of each glass.
Pour 200mls of Organic Cold Brew Concentrate into a saucepan and heat on medium until hot.
While waiting for the coffee to heat, remove your COYO Vanilla Bean + Nutmeg Organic Coconut Ice Cream from the freezer and place 2 scoops into each of the brownie filled glasses.
Now with the coffee nice and hot, pour 50mls into each glass and spoon over with Maple syrup to taste.
Garnish with fresh grated nutmeg and brownie crumbles. Serve immediately and enjoy!
